A couple of months ago, Flavia Schepmans, an art director from New York, spent a week in Florence doing an intensive cooking course with my team and me at the Zibibbo Trattoria. One of the more delightful books on cooking, Soffritto, gave me the best ever recipe for Aubergine Parmigiano. I will be pleased to see some construction here when Benedetta has the time for it.
